Santa Barbara County, California. 100% Cabernet Sauvignon | Practicing Organic
China Blue Vineyard, Happy Canyon AVA [Monopole]. A single-vineyard Cab from Block 1 of China Blue—a monopole site with clay loam soils, red chert, and serpentine cobbles. Planted in 2014, this vineyard yields Cabernet with distinct minerality and structure.
Fermented with native yeast in open-top oak fermenters and left on the skins for two weeks with gentle pumpovers. Aged 20 months in French oak (33% new) before being bottled unfined and unfiltered.
This is a bold, expressive Cab with deep, concentrated fruit, firm yet polished tannins, and a savory mineral streak from those unique soils. Only 148 cases made.
